I had a craving yesterday (6 June 2011) for sweet potatoes, but it was a nice warm day so I wasn't interested in something hot like sweet potato soup or super-sweet like sweet potato pie. A quick Google search yielded this recipe, which is all at once healthy, delicious, and easy.

That's a helluva find.

I recommend serving this with a bitter vegetable (we had it with collard greens) to offset the tang of the lemon and the sweetness of the potatoes, and for a drink, something light would be best - apple juice or water, actually, would be my preference.
