Beer Cheese Soup

Mmm, beer cheese soup. You know, it's funny - growing up in a college town with access to only nasty beer (Natti Lite in a keg is seriously not even worth the title "beer"), I had no interest in food cooked in/with beer. Then I move to Massachusetts where beer snobbery is a religion, and suddenly I cook with beer and, on occasion, drink the stuff.

Go figure.
